Origin: Saperavi grape is cultivated in the village of Chailuri Sagarejo district, Kakheti, East Georgia.

Grape variety: Dry red wine Saperavi is produced of 100% Saperavi grape variety.

Age of grape vine: 10-year-old vineyard (relative to vintage year).

Harvesting: Climatic conditions in Chailuri Sagarejo district, provides high natural grape sugar content in the grapes reaching up to 25-26%. Harvesting takes place in the end of September and the beginning of October. The average vineyards productivity is up to 5 tons of grapes per hectare.

Vinification: Initial indicators of grapes - sugar -220 g / dm3.

Carbon maceration - straight before loading the grapes into the macerator tank, the macerator was filled with carbon dioxide to carry out maceration in anaerobic conditions. The macerator was manually loaded with whole bunches of grapes. The duration of the maceration process is 20 days at controlled temperature of 25 degrees Celsius. After the expiry of the maceration period pressing the pulp took place. Special yeast has been added to complete fermentation on the remaining sugar. The fermentation temperature is 15-18 degrees. Physics-chemical condition of the spilled Saperavi: alcohol - 12.5%. The wine is bottled and corked with special natural cork FLORI and is sealed in a bottle on the neck with natural beeswax.

Storage: The finished wine is stored (aged in bottle) in horizontal position in dark wine cellar with whole-year temperature control at temperature not exceeding + 12 ° C.

Tasting notes: Saperavi 2005 red dry wine is a unique wine you can’t meet every day. It is characterized by a dark garnet saturated color, due to the high content of anthocyanins, with a good natural tannin structure, moderate astringency, rounded, harmonious, complete and extractive with a long aftertaste and tones of aging. When you open the bottle it has an unbelievable nose of berries and after time the wine breaths new aromas of pomegranate, black rose and dry plums appear. Its highly recommended to aerate this wine in decanter.
